Diseases which plague our populations like heart disease, cancer, and diabetes are quite often food-borne illnesses that are directly correlated with our Western diet of rich animal-based and/or processed foods. These foods are virtually absent in a WFPB diet which emphasizes whole (living) plant-foods. A multitude of empirical studies have indicated that a diet of whole plant foods has the potential to not only prevent, but reverse and/or improve many common disease processes. The WFPB (vegan) diet has been dubbed the healthiest of all dietary plans by various centers of academia. In addition, the animal agriculture and processed food industries are among the most environmentally destructive industries from every sector: land use, water pollution, soil degradation, air pollution, deforestation, oceanic deletion/die-offs, and oxygen depletion. Our inevitable population growth and economic development means that our planet can no longer sustain these intensive/destructive industries. This course is dedicated to the premise that one lifestyle change has the potential “to decimate our eco-footprint and impact on our over-burdened healthcare system.”
